  • Avocado: This adds a creamy element to the raw salad, sliced or diced. Use one without many brown spots, as they can affect the flavor.
  • Fresh herbs: We like to use a combination of minced fresh parsley and basil.

Ingredients 

For the dressing:

  • 2 tablespoons of lemon juice
  • 1 teaspoon of apple cider vinegar
  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of olive oil (optional)
  • 1 tablespoon of maple syrup or agave
  • Salt and pepper to taste

For the salad:

  • 3 cups of baby spinach
  • 1 cup of purple cabbage, shredded
  • 1 cup of cherry tomatoes, halved
  • 2 carrots, shredded or julienne
  • 1 yellow bell pepper, sliced
  • 1 cup of cucumber, diced
  • ยผ cup of a red onion, thinly sliced
  • ยผ cup minced parsley, for garnish
  • Avocado, sliced (optional)
  • Crushed red peppers (optional)

Instructions
