- Oats: Itโs best to use old-fashioned rolled oats. Gluten-free if necessary.
- Peanut butter: Itโs best to use natural peanut butter, crunchy or smooth, made from peanuts only (no added sugars and oils). Other nut or seed butters will work, too, like almond butter, cashew butter, sunflower seed butter, etc.
- Nuts & Seeds: We used chopped walnuts and flax meal, but you can use any raw and unsalted nuts/seeds youโd like: pecans, almonds, cashews, pepitas, chia seeds, etc.
- Cinnamon: This warming spice pairs perfectly with peanut butter.
- Applesauce: Unsweetened applesauce is a great low-fat binder and will add a subtle sweetness to the homemade vegan granola.
- Oil: Fat is important to give the peanut butter granola clusters the correct texture. Any neutral oil, like canola oil, will work. Coconut oil also works, but youโll need refined coconut oil for no taste.
